You have understood correctly, the grinder may only be adjusted during the grinding process.
The grinding degree influences the result in the cup very much, the finer you grind the slower the water runs through the coffee powder, basically you can say that the more you grind the more intense is the aroma of the coffee, but for some coffees this is, mostly cheaper Robustasorten rather bad for the taste because they then become too bitter.
With high quality coffees you can vary the taste by adjusting the grind in any case and I do the same with my Delonghis - I rather move in a very fine grind range between level 1-2 , but only coffees with water quantities of up to 80 ml can be made with it, because then the water only drips through the spout and the pump can almost no longer press water through the coffee grounds, if you want to obtain coffees with more water, the grind must be at least at factory setting (medium level).
The standard grinder is usually on a medium level, would leave it that way at the beginning, so at the beginning only vary with the grinding quantity until you get your desired result.
If the result is not good enough, you can still make changes to the grinding degree, but note that a grinding degree adjustment only really comes into effect after the 3rd coffee after adjustment.
