Water too hot/ over 100°C

Hello,

The water is heated too high, it comes boiling and bubbling from the outlet of the brewing group, therefore a part injects next to the funnel, which leads to the coffee dispenser. Observed with the flap open and the flap switch depressed.

This is noticeable with a brew for 5-10 seconds after the coffee grounds have been heated by the first quantities of water passed through. Then it cooled down again, because cold fresh water flowed into the boiler.
Even if I open the steam valve while I am brewing coffee, there is no water jet, but a bubble-throwing water coming out. By this I mean that the temperature in the waterway BEFORE the steam valve is above 100°C and BEFORE it boils immediately due to a drop in pressure into the atmospheric pressure and cools down to below 100°C.

Warming behaviour of the machine is normal, approx. 2 minutes until it is ready to drink coffee.
In case of a short-circuit or an interruption at the temperature sensor it would never be ready for use.
Mechanical mounting of the temperature sensor seems to be okay, too, clamp presses it tightly against the boiler, fixing I had already renewed (both surfaces cleaned and with a small amount of heat conducting paste the sensor tightly attached).

Has anyone an idea? Or a question, if unclearly described?
