EQ 500 : Less and less milk - foam

I'm making latte macchiato with barista oat milk.
I always take the milk out of the fridge, shaken beforehand
...

Sometimes I have a head of froth up to the edge of the glass, sometimes only 2/3 of

it.....

what could be the reason for that?
