Coffee only tastes sour

Hello, everyone,

I'm at a loss. The coffee crema from my Philips HD8834 (see Saeco minuto) just tastes totally modest. No matter how adjusted or which coffee I use, it is simply only penetratingly sour. Actually, I have tried everything
:- Various types of coffee from supermarket to local roaster-
Machine completely decalcified, disassembled, cleaned and lubricated (mechanical knowledge available)
- All grinding degrees, grinder adjusted so that the ceramic disks do not touch each other at the finest level-
All aroma levels tried-
All brewing temperatures triedSomeone

has an idea what is wrong, or is the machine just crap?
Could it be because of the water? But that should be ideal for me. Resin water with a slight admixture, exact data below. With mineral water the coffee tastes different but not necessarily better.
