Hallöchen!Does anyone have any idea whether the still mineral water - Altmühltaler - from Aldi can also be used without hesitation?

Hardness grade 9.1°dH, should fit with regular descaling. I don't know what the pH's like, though. Do you have very hard tap water?

I personally would use the tap water and adjust the machine correctly. Then it is simply decalcified on demand and is good. I've never done it differently with my former VAs.

If you find out how the pH value of the Aldi water is (shouldn't be too acidic), you can use them as well, but also here the correct adjustment of the degree of hardness in the VA is necessary, so that you regularly decalcify.
