Advantages compared to cheaper models:
1000pro: Steam cup warmer, double macchiato function, automatic milk/milk foam changeover
1000: Large tanks, no error-prone touch display
800: Automatic milk hose cleaning, cup filling quantity change with automatic grinding quantity adjustment, finely adjustable grinding mechanism, extremely robust design of hose connectors, valves, motors, boilers and the brewing group.
I would therefore also suggest the 800 for pure coffee needs, the surcharges for the 1000 models are disproportionate.
The real advantages are the valve, grinder and brewing group construction.
On the other hand, Jura, Saeco, Delonghi in comparison are pure surprise egg technology.
WMF and Quick Mill are, for example, the only fully automatic household appliances whose brewing groups do not require grease to function.
The Jura blocks mechanically, the Saeco breaks its gear and the Delonghi blocks the waterway or throws coffee powder around itself when it lacks fat.
If espresso is of (real) interest only Quick Mill comes into question. Less electronics, less comfort, but a heated (permanently installed) metal brewing group and a massive dust-fine grinding mill are the differences.
The QM5000 is even cheaper than WMF or well equipped Jura models, just a little less well known and not available in supermarkets.
