Our Jacu is a rare gourmet coffee that we obtain exclusively from the Camocim Organic farm in Pedra Azul do Arace in the state of Espirito Santo. Its "production" is similar to the more well-known Kopi Luwak. Instead of genets, the Jacu-bird is the executive producer: it belongs to the group of white-fronted guans (Penelope superciliaris). The Jacu, a turkey sized bird, mainly populates shade trees, lives in larger groups and feeds mainly on ripe coffee cherries at the time of coffee harvest. Very choosy when eating, Jacu only eats flawless, ripe, dark red cherries. The coffee cherries are excreted after only two hours of digestion (genet cat: 8 hours), collected by the plantation workers, cherry by cherry cleaned by hand and dried. Once a scourge for the coffee farmers of the region, Jacu coffee has become a prime example of perfect synergy between man and nature thanks to the initiative of the bio-visionary Henrique Sloper. What fascinates us is that it is ultimately the bird that selects the coffee. The fact that the birds do not eat only Iapar or Bourbon Amarelo or Caturra beans means that the coffee is a real, natural cuvée and every cup tastes different by one nuance. In Austrian, therefore, a real "mixed sentence". Medium strong, elegant, tingly on the palate, aromas of molasses, hazelnuts and green bananas. 100% Arabica
