We roast this coffee blend especially for Greek/Turkish preparation - much lighter than we usually roast - as is customary in Greece and Turkey. This mixture, diplomatically called "Byzantine blend" by us, is generally well tolerated and the acidity pronounced in lighter coffees is concealed by the sugar used in the Greek/Turkish preparation and converted into caramel flavours.
