This coffee rarity originating from the Indonesian island Sulawesi is cultivated on the volcanic soils around Mount Sesean by the independent ethnic group of the Toraja in the coffee gardens of their family (Tongkonan). The Toraja cultivate their coffee varieties in the traditional way and without the use of fertilizers and pesticides, a type of production that has become very rare due to the low yield. A maximum of 1,500 kg is harvested per year, partly from over 50 year old shrubs that are over 6m high. Only fully ripe red cherries are harvested, then filled into wooden barrels and covered with pure spring water. The flesh is removed by constant processing with a rammer, the coffee is carefully washed. The still moist coffee beans are spread out in the sun and dried with constant turning. Drying can take three to four weeks, as the coffee must be collected in the rain and stored in woven baskets. After drying, the Toraja manually detach the coffee beans from the parchment bowl. Only flawless beans are selected and stored for export in small wooden barrels of about 1.5 kg each, which they produce themselves from the wood of the Bo'bok tree. These barrels are hand-carved, decorated with symbolic representations of Toraja wisdom and values and hand-painted with earth colours. Intense fullness of taste with voluminous body, aromas of wormwood, gingerbread and chocolate icing. In the finish like a heavy red wine. 100% Arabica
