Decaffeination takes place in the green and unroasted beans stage. First the beans swell in steam. Then the caffeine is extracted with solvents. This has to be done in several steps, as not all the caffeine content can be dissolved the first time. Finally, the solvents are removed from the beans and dried for further storage and processing.
