The Principale is a further development of a typical Italian bar espresso. Accordingly, the emphasis here is on a low acidity in combination with nutty-chocolatey flavours. These are already included in the principal by the selection of the green coffee types used. The production of'bitter chocolate flavours' by too dark roasts is therefore unnecessary, the varieties involved can fully develop their aroma. The Robusta content of 20 % is smaller than is usual for many bar-espressi. It provides sufficient body and rounds off the taste without covering the other varieties in the blend.
