he plantation has been owned by the Carvalho Dias family since 1890. Gabriel de Carvalho Dias, the owner's nephew, is responsible for running the farm. It is located on the southern border with the state of Minas Gerais in the state of São Paulo in São Sebastião da Grama. The hilly and mountainous landscape of the Mogiana region, where the Fazenda Rainha is located, resembles that of the Sul de Minas region. The topographical conditions do not allow mechanical harvesting, so the coffee is harvested by hand, unlike on many plantations in Brazil. Special emphasis is placed on social and ecological aspects in the operation of the Fazenda. For example, other domestic plants are cultivated on the plantation to ensure the ecological balance. With a total Fazenda area of 484 hectares, less than half the area of 190 hectares is actually used for coffee cultivation. The employees of the plantation live in well-equipped houses, there is a transport system to take the children to school and a leisure area with club and football field. The water used is treated to prevent contamination of the water sources. The coffee cherries are picked by hand and transported to the processing area on the same day, minimizing the risk of uncontrolled fermentation. It is washed immediately and sorted by size. Defective beans are sorted out. The coffee cherries dry in sunlight before being peeled in the water channel. The coffee beans then dry until they have a moisture content of 20%. The moisture is then reduced to 11% in a special dryer. The finished green coffee is stored in a warehouse on the Fazenda. The quality of the coffee produced on the Fazenda Rainha is the result of the dedication to the plantation, the care of the coffee trees and the harvesting and processing of the coffee beans. Helena Mello's work for Carcalho Dias and her family has resulted in the plantation being one of the finalists in the Cup of Excellence competitions in 2000, 2001 and 2005.
