Indian `monsooned` coffee is interesting for frahling lovers for several reasons, but above all because of a special preparation process called `monsooning`. In the past, when the goods were transported by sailing ship from and to India, the crossing to Europe took several months. During the journey the green beans were exposed to high humidity and partly also the monsoon rain, whereby the taste and the color changed and the beans at the end of the journey had a strange yellow tint. Consumers had become accustomed to this change and as shipping times became shorter and shorter due to modern steamers, European coffee drinkers missed the usual taste. To enjoy it again, monsooning was introduced: after the harvest, the green coffee is exposed to the monsoon winds and the rain that causes the beans to swell very strongly for several weeks. The monsoon winds blow in southwestern India from May to June, and during this time the beans are stratified in special, upwardly open warehouses about 12 to 20 cm high and remain there for five days and are raked again and again. Afterwards they are filled into coffee bags and exposed to the winds of the monsoon. After seven weeks, the beans are hand-picked.
