This Arabica speciality comes from the Indian Malabar coast, the state of Kerala in southwestern India. The climate is characterized by small temperature fluctuations and is strongly influenced by the monsoon during the course of the year. After harvesting and preparation, the coffee is stored for 8 to 12 weeks in warehouses without side walls. The monsoon that was common at that time allowed the green coffee to ripen in a unique way. Unlike all other green coffees, the straw-yellow colour and the low specific weight of the green coffee beans are particularly striking.
