The Monsooned Malabar has an extraordinary abundance. This coffee rarity is characterised by its full aroma and fullness. It tastes fruity to tart and has a rather strong body. Monsooned Malabar is a very special rarity. The region of Malabar lies at the southern tip of India north of the city of Cochin. Here, at an altitude of 900 to 1500 m above sea level, a special processing method, the "monsooning", is used, which gives this coffee its exclusive character. When coffee was still being transported open on sailing ships, the transport from India to Europe took about half a year. During this time, coffee was exposed to wind and weather, changing its consistency. Legend has it that European consumers had become accustomed to this taste and missed this peculiar taste with increasing transport on fast steamers. Today, the coffee farmers of the Malabar region use the monsoon rain and its winds to create a coffee that corresponds to this former coffee. The coffee beans are first processed dry, peeled and then filled into jute bags. These are loosely exposed to the monsoon. Every 6-8 days they have to be decanted into new bags to avoid the formation of mould. After 8 to 10 weeks the coffee is finally ready, it is hand-picked and starts its journey, now on modern freighters, towards Europe. The beans of the Monsooned Malabar are paler and lighter than other green coffee beans. They are relatively large and appear swollen.
