BATAK LINTONG Pure Premium Arabica, Indonesia, semi-washed The raw coffee has a heavy, green colour with a slight bluish hue and is sorted very carefully according to bean size, which is perhaps the main reason why this coffee tastes more delicate and milder than its "big brother", the mandheling. On the other hand, the rather peculiar method of preparation could also be responsible for this fine, exotic taste. This is because the hand-picked coffee cherries are normally depulpted, but the pulp remains are not removed by fermentation in water but by manual rubbing in the sand and after several days of drying in the open air the parchment skin is peeled off. This incomparable gourmet coffee only comes into its own when it is roasted slowly and gently in a drum roaster for at least 18-22 minutes to a medium to dark, homogeneous colour.
