It takes its name from the city of Yrgalem in the Sidamo region of Ethiopia, the area of origin of all Arabic coffee species. This botanical variety called Typica is cultivated in small plots. The selection of Yrgalem is the result of a collaboration with Abdullah Bagersh, the third generation of a family that has always been involved in the processing of green coffee and a guarantee of the standard of optimal ripeness of the cherries and of the processing process after the harvest.
