The India Monsooned from the rainy region of Malabar is a coffee with a fine, mineral flavour and medium body. It owes its mild taste and low acidity to `Monsooning`. Earlier, when green coffee was transported by sailing ship, the crossing from India to Europe took several months and crossed different climatic zones. During this journey the green coffee beans were fermented by the alternation of warmth and cold, humidity and dryness and got a yellowish discolouration and a very special taste. Coffee drinkers had become accustomed to these over the course of time and as the shipping times became shorter and shorter due to modern steamships, the natural monsooning did not take place and the taste changed.
