Pampojilá is a plantange very near Lake Atitlán, surrounded by three volcanoes. The plantation was founded in the middle of the 19th century by Manuel Díaz and his family and is still in their possession. The coffee plants are overshadowed by the old'chalúm' trees, which convert nitrogen in the soil into amino acids, which in turn the coffee plant uses for its optimal growth and aroma development.
