The Sumatra Gayo Highland grows on fertile volcanic soils in plantations up to 1700 m above sea level. About fifty families grow this coffee in the Gayo Mountain area in organic farming. Only the ripe cherries are harvested during the harvest time. After picking (hand picking) a complex process begins with approx. 9 working steps. The picked coffee cherries are fermented first. After pulping (removing the red skin with a hand-operated mill) the beans are washed for the first time.
