In contrast to the large coffee plantations on Java, coffee in Sumatra is mainly produced by countless smallholder farms. Quality in Sumatra fluctuates due to the large number of small farmers, so we only offer it if we succeed in purchasing first-class quality. The coffee cherries are dried in the sun on the ground (dry preparation), so that the coffee beans absorb taste components from the pulp and from the soil. The result of dry preparation is a low acid coffee with a massive fullness. Our'LinTong' is a full-body coffee with concentrated earthy-sweet aromas and accentuates spicy nuances such as cinnamon and tropical woods.
